MEXICAN LUNCHEON SKILLET

2 pounds Parker House Special Sausage
1 cup chopped green pepper
1 cup chopped onion
2 tablespoons granulated sugar
1 cup dairy sour cream ½ teaspoon salt
¼ teaspoon red pepper
1 (7 ounce) package elbow macaroni, uncooked
1 can tomatoes, undrained
Chopped parsley

Brown sausage; drain. Mix in green pepper, onion and seasonings. Sprinkle macaroni over sausage mixture. Spread sour cream over macaroni. Pour tomatoes over sour cream; do not stir. Cover; cook over medium heat 10 minutes. Uncover; stir to mix. Continue cooking 15 to 20 minutes, stirring occasionally. Sprinkle with parsley.

Yield: 6 servings.
