1 pound Parker House Special Sausage,
1 (1 pound) can tomatoes, undrained
1 ½ cups water
½ teaspoon salt
4 cups coarsely shredded cabbage
1 cup packaged enriched precooked rice
¼ cup ketchup
¼ teaspoon pepper
Brown sausages; remove from pan; drain. Line bottom of skillet with 2 cups cabbage. Sprinkle sausage over cabbage. Pour rice over sausage. Combine tomatoes, water, ketchup and seasonings. Pour tomato mixture over rice. Top with remaining 2 cups cabbage. Cover; simmer over medium heat 40 to 45 minutes. Stir to mix before serving.
Yield: 4 to 6 servings.
