1 pound Parker House Special Sausage
¾ cup chopped onion
¼ cup celery
1 (15 ½ ounce) can chili con carne with beans
¼ cup water
¼ teaspoon pepper
2 cups corn chips, slightly crushed
1 cup grated sharp Cheddar cheese
Brown sausage; drain. Add onion and celery, cook 3 to 5 minutes. Stir in chili, water and pepper. Reserve ½ cup corn chips for top. In ungreased 1 ½ quart heat-proof glass casserole, layer ½ remaining corn chips, ½ sausage mixture and ½ cheese; repeat. Cover; bake in 350°F oven 10 minutes. Sprinkle remaining corn chips around edge of casserole.
Yield: 4 to 6 servings.
